Nearly every month someone asks me what I think of their new food delivery idea.
If you are making the food, you have no chance as a VC-backed business.
As a bootstrapped restaurant business, you can do it. You may even make a few million dollars if you grow slow, focus on keeping quality high as you scale, and are profitable from Day 1. In 15-20 years, maybe you go nationwide – unlikely, but plausible.
It’s just the physics of the restaurant business:
As you scale, your food quality goes down.
As you scale, you face more competition from the broader food market (not just your niche).
Even at scale, your margins still suck.
You need to be patient and methodical – venture capital is neither.
